Greek Village Salad
Greek Village Salad
- 1 small white cabbage, shredded
- 1 small lettuce, shredded
- a bunch of rocket, snipped with scissors
- 4 spring onions, chopped
- 1 small cucumber, sliced
- 3-4 large ripe tomatoes, quartered
- 2 large green peppers, deseeded and finely
- sliced into rings
- black olives
- 50g fetta cheese, cubed
- a handful of coriander leaves
For the dressing
- olive oil
- lemon juice
- salt
- Place the cabbage, lettuce, rocket, and spring
onions in a big salad bowl and toss. Garnish the salad
with the cucumber, tomatoes, olives, and fetta cheese,
before sprinkling over the coriander leaves.
- Mix the olive oil, lemon juice and salt in the
preferred quantities and pour over the salad just before
serving.
